Shaun Hergatt is a classically trained chef renowned for his technically precise cooking and painterly presentations. Hergatt is inspired by childhood memories of growing up in rural Queensland and his daily life in New York City. He developed his passion for food at a young age, experiencing flavorful dishes prepared by his Scandinavian grandmother and his father, a professional chef.

Drawing from his long-standing relationships with local producers and foragers, he features a seasonally driven menu, largely focused on artfully prepared seafood and vegetable dishes.
