Hergatt is inspired by childhood memories of growing up in rural Queensland and his daily life in New York City. He developed his passion for food at a young age, experiencing flavorful dishes prepared by his Scandinavian grandmother and his father, a professional chef.
Drawing from his long-standing relationships with local producers and foragers, he features a seasonally driven menu, largely focused on artfully prepared seafood and vegetable dishes.
