Arnaud Donckele’s creative mastery ensures an unparalleled experience which combines exceptional cuisine and wines from around the world selected by the head sommelier. Each considered a blank canvas, dishes are painted with delicate and bold medleys.

In the evening, La Vague d’Or stages a ballet inspired by land and sea. As a virtuoso alchemist of flavors, conductor Arnaud Donckele orchestrates backstage conductors and Ambassadors on stage in a choreography full of poetry.

From the “Au fil du temps” menu which puts its timeless pieces in the spotlight to the “Epicurean Balade” menu dedicated to the most gourmets, he composes his plates like a concerto of emotions inspired by green hills, sea iodine the century-old history of the region.

Arnaud’s cuisine is a bucolic journey through the Mediterranean, celebrating the heritage anchored in the traditions of the region and always pushing the limits of his imagination. Chef Arnaud and his team of 33 cooks create delicate surprises for the taste buds while in the dining room, Thierry becomes a storyteller of Mediterranean fables. Authenticity and generosity are the hallmarks of the Art of Receiving staged by the Ambassadors, shared each evening with the guests.
