Twins Garden, Moscow: the flagship project by the Berezutsky brothers

It is safe to say that Twins Garden is a project that has no analogues in Russia, which is designed to raise Russian cuisine to a new stage in its evolution. The garden “bloomed” at the end of 2017 and became the new incarnation of the Twins restaurant, changing the location from Malaya Bronnaya to Strastnaya Boulevard. The word “garden” in the name has strategic meaning: about two-thirds of grocery traffic comes to the kitchen from its own farm. The Twins Garden farm spans across 50 hectares of land in the Kaluga Region and is cultivated and designed taking into account international experience and advanced technologies.

Thanks to the brothers’ exceptional yet distinct training, the culmination of their skills has made for a restaurant at the forefront of culinary modernity in Russia. Twins Garden is comprised of a farm, two hours outside of Moscow, the restaurant itself with its panoramic city centre views and a laboratory which can be found in the same building as the restaurant. The brothers’ aim is for Twins Garden to be 80-90% self-sufficient year-round – a completely unique project for Russia.

Under the supervision of Ivan and Sergey, about 150 species of vegetables, fruits, berries and herbs are cultivated; in the natural environment, fish and poultry are bred; dairy cows and rare Nubian goats are grown for their own cheese production. Scientists of the K.A. Timiryazev Moscow Agricultural Academy also take an active part in organizing the farm. They help to organize the space correctly and carefully monitor the emergence of cultures unique to the region.

The à la carte menu contains about 40 items, including, for example, chicken liver pate with sweet peppers, baked mushrooms with onions and “celery” lard, sterlet with beets and “fusilli” from vizigi, “Our Cheeses” set from cow and goat milk. For those who are only getting acquainted with the non-trivial approach of the Berezutsky brothers, a tasting set has been created. It includes six dishes from the main menu, reflecting the gastronomic style of the chefs as much as possible.

The Twins Garden wine list is by far the largest in Russia. Currently, it includes more than 1,000 labels: from popular democratic wines to rare and exclusive items carefully selected by restaurant experts throughout Europe. The collection is dynamic and is regularly updated, so 1,000 is only the beginning.

At the core of the brothers’ offering is a focus on Russian flavours, achieved through a commitment to sourcing seasonal ingredients locally. The brothers aim to create a sense of nostalgia and familiarity in their food which they achieve through innovative techniques. A reliance on seasonal ingredients means that the menu changes regularly – with partial changes at least once a month – making every visit to the restaurant unique.

The brothers have an additional establishment in the heart of Moscow, Wine & Crab; serving nine variations of crab and over 900 options of wine. Again, a truly unique experience in Russia’s growing gastronomic world. They also run TWINS Wine Space at the St. Regis.
