The restaurant encompasses a team of 58 staff members graduated from prestigious Swiss, French and other institutions abroad and all staff share their skills, their professionalism and their passion for food to the great satisfaction of Crissier’s guests. The team is inspired by approaches to management of high level athletes with team spirit, challenge, confidence and sharing being the 4 values that unify them.
Based on these sacred values there is a pure respect for the local ingredients whilst the dishes that structure the menu are conceived to avoid repetition of flavors. A high level of control is employed as the product that is brought to the restaurant is sorted and selected based on quality, considering its texture, its visual aspect and its taste. Moreoever, the menus are designed to ensure integration of a variety of foods, in order to respect the nutritional balance whilst dishes are created with respect to the balance of textures.
The restaurant itself offers five unique ambiances. The room of Philippe Rochat, offers a calm and relaxing environment whilst Room Frédy Girardet is where the whole history of the restaurant began. The decoration is structured around the art of service, which like the restaurant’s cuisine is constantly evolving.
On the 1st floor, private room Benoît Violier offers the discretion and comfort that business meals or celebrations may require. For a unique gastronomic experience close to the chefs, you can book the Franck Giovannini’s table which is available only exceptionally depending on the activity of the kitchen. Finally the Smokehouse is a place for relaxation while enjoying a quality cigar.
