On the 8th floor of Denmark’s national football stadium, we find Geranium. A luxurious, open kitchen, fine dining restaurant; it boasts a beautiful view of the gardens and the shiny copper roofs of Copenhagen. It might be an odd location for a fine dining restaurant, however, the contrast between the modern and rustic scenery, emphasizes Geranium’s vision of clarity and diversity.

Chef Rasmus Kofoed is dedicated to bringing Scandinavian cuisine to a new level, by experimenting with local products, such as wild and organic ingredients from the land and the sea. Dishes are beautifully presented, with utmost attention to detail as to create a piece of art with well-balanced flavors which revive emotions and enrich senses.

Chef Rasmus Kofoed was trained at Hotel D’Angleterre in Copenhagen and Scholteshof in Belgium. In 2007, he opened Geranium to explore Scandinavian recipes, using exclusively local ingredients. One of is signatures is the razor clam: a tartar of razor clam served in an edible shell and colored with squid ink. The Universe menu is composed of 20 small courses, seasonal and accompanied by an exclusive wine, selected by expert sommelier, Soren Ledet.
